Shaping Up with a Kardashian

Hello, friends!  It’s awfully strange to be writing a post around lunch time, but that is the true beauty of being a teacher–  summers off! 😉

I had planned on sharing with you some beautiful pictures of the Salmon & Mock Tuna Melts that we had for dinner last night.  However, Larry needed the camera for work today, so I’ll have to post those later this evening.  Trust me!  You do not want to miss these recipes!  Especially if you are newbie vegetarian and you’ve been missing tuna sandwiches 🙂

Yesterday was day 1 of my 60 day Healthy Habits Fitness Challenge.  I decided to do a workout routine that I found in last month’s Shape Magazine.  June’s issue featured Kim Kardashian on the cover, and included one of her workout routines created by Gunnar Peterson

I thought this was the perfect workout routine.  You can do up to 5 circuits, and each circuit takes about 10 minutes.  This makes it ideal for days when you can only do about 30 minutes, or for days when you have more time and can do 50-60 minutes.  Best of all, you don’t even have to leave the comfort of your own  home!

My heart rate was elevated throughout and I worked every muscle in my body.  I’m not sure if I love it quite as much as the Yvonne Strahovski workout, but it was a good change of pace.  I was a sweaty mess by the end. 🙂

Where do you find your workout routines???  I find most of mine in Shape magazines and on other blogs. 

Today I plan on going to the gym to run about 3 miles on the treadmill (yuck!) and to do some ab work. 

I really enjoyed reading your comments on Healthy Habits you would like to adopt.  If you haven’t already left a comment telling us your goals, please do!  It’s so helpful to know that there are other people out there working toward being their healthiest self!  Also, I would love to hear how day one and two have gone.

Dinner Divine

Last night’s dinner was a Farmer’s Market dream.  Seventy five percent of the food on my plate was grown within 20 miles of my house, and none of it ever had any preservatives, additives, or pesticides. 

It was a dinner divine.

After a quick stop at the Farmer’s Market to pick up some produce from my CSA, the wheels in my head started turning.  I knew I could throw together a quick, easy, healthy, and delicious dinner.

First up was the Swiss chard.

I’ve never cooked Swiss chard before, but I have fallen madly in love with leafy greens, and these were especially appealing with their purple stalks and billowy edges. 

I first toasted about 2 tablespoons of pine nuts in a hot pan and set them aside to use later.  I then heated about a tablespoon of olive oil over medium heat and added sliced onions and the Swiss chard stalks cut into inch sized pieces. 

I chopped the chard leaves into bite sized pieces and added them to the onion/stalk mixture.

Then inspiration hit me! 

Recently, I have seen many recipes where greens are cooked with raisins, or something semi-sweet.  I didn’t have any raisins, but I did have dried apricots.

I diced about 2 tablespoons of apricots and added them to the mixture.

I drizzled the mixture with balsamic vinegar and added a dash of sea salt and freshly ground black pepper.  

When everything was good and tender I topped the mixture with the toasted pine nuts.

While the greens were cooking I also made some quinoa with vegetable stock instead of water to add some extra flavor.

But here comes the really cool part.  I, yes you read this correctly, I, grilled the vegetables.  Not Larry, but me!!!!  I did it! 

I had picked up a beautiful eggplant as well as zucchini, and squash from the market on Tuesday.  I also had a few left over baby bellas from the vegan enchiladas I made on Tuesday.   I sliced these babies up, threw them in a large plastic baggie with olive oil, sea salt, ground black pepper, and balsamic vinegar, shook the bag like crazy, and plopped them on the hot grill.

The combination of quinoa, Swiss Chard, and grilled veggies was perfectly filling and tasty.

It was almost effortless, but as I was eating, it I knew that if I had ordered this meal in a restaurant, I would have been more than pleased.

It is very easy to make healthy dinners that are delicious.  Especially at this time of the year when fresh fruits and veggies are in abundance. 

I encourage everyone to think about adding fresh veggies to your dinner plate at least once a week.  And if you’ve never been to a Farmer’s Market, I highly recommend it.  There is something so amazing about produce this fresh!!!

Enchiladas Sin Carne

Buenos Noches, amigos! 

I just got back from taking a short two mile run with Larry around our newly paved track.  Two miles doesn’t sound like much, but considering that before he walked in the door I was ready to put my PJs on and climb under the covers, I think it’s a pretty amazing feat!  😉

I didn’t get much sleep last night.  The dogs kept waking me up and I don’t think I fell into a deep sleep until about 15 minutes before my alarm went off.  Well, maybe not, but the screaming alarm at 5:45 AM did make me want to cry big, fat alligator tears.

To top it all off, when I left for work the puppers were nice in cozy in my bed sound asleep!

Today wasn’t too shabby for a Tuesday.  We spent a lot of time outside and my shoulders got a bit toasty on the playground.

Today’s lunch was leftover Avocado & Pinto Bean Enchiladas from Dreena Burton’s Eat, Drink and Be Vegan (hence the meatless enchilada Spanish title tonight).  The leftovers may have been even better than the original dish. 

Last night I made Larry ground turkey enchiladas.

I made my own “meat” out of mushrooms, beans, onions, and cashew pieces.

It was out of this world!

I have absolutely no desire to ever eat meat again after discovering so many delicious alternatives.  I truly believe that I like these enchiladas far better than any meat version I have ever tried.

His and Hers to clean up…  ugh!  This is seriously the only downfall to making a meat and meat-free version of each meal.  But it is well worth it, and it makes both of us very, very happy 🙂

Tonight I plan on sleeping really well and waking up super refreshed.  I’ve been playing around with the idea of getting up early to go running before work.  Do any of you workout before going to work?

I’ve tried this before, but I find it especially hard to get up at 5 AM.

Any tips for getting used to a routine of early morning workouts???

Clean Eating on a Dime

I have discovered something wonderful that I simply must share. 🙂

Each month, Clean Eating Magazine features Five Fast Dinners for under $50.  Usually I pick and choose from these five meals and make them randomly throughout the month.  However, this month I decided to devote one entire week to these Clean Eating meals, and I tell ya, dinner has never been easier, or healthier!

Last night I made Steak Tacos with Avocado Cream Sauce.

Larry had steak that was seasoned with taco seasoning, cumin and cinnamon.

I used black beans with the same seasoning and the juice of one lemon  instead of steak and it was fantastic.

Rather than being full of fat and calories, these tacos were full of veggies and fresh flavors.  We used romaine lettuce, red, yellow, and orange peppers, cilantro, and tomatoes to fill our tortillas.  It was comparable to Chipotle’s fresh flavors.  No joke!

If you don’t know what to make for Cinco de Mayo tomorrow, this would be perfect!  I almost wish I’d waited just a couple more days.   😉

Well, I’m off to read another few pages of The Sound and the Fury.  After struggling to find a new book to read (I just finished The Help.  It was wonderful!), I decided to go back to the classics.  Faulkner sure knows how to make you work for a story!

Monday Runday

It was back to work for me today after a week long vacation we teachers like to call Spring Break.  Boy, did this Monday business hit me hard.  After six hours of sleep last night, no break during the workday, and 23 incredibly lethargic third graders, I was ready to go home, curl up under the covers, and go to bed.

But I didn’t. 😉

Meg and I went on another long run, and today we ran 9.06 miles!!!!  A new record distance for me!!! 

Here are the stats from Meg’s new Garmin.

Time: 1:38:7 (there are a lot of stoplights in the city)

Average Pace: 10:49

Average Speed: 5.5 MPH

Max Speed: 15.8 MPH!!!!! Wow!  We were bookin’ it!!!!

This one was a bit easier than last Monday’s run, though toward the end my legs felt like lead, me knees ached, and my hips felt like they were stuck.  Any suggestions for easing up on these aches and pains???  I feel like breath-wise I always get into a comfortable rhythm and could go on forever, but my joints are what hold me back.
 
I know I will have no trouble falling asleep tonight!  I’m going to make this post short, so I can go make dinner before I die of starvation!  We’re having soba noodle stir fry, which I found a recipe for in last month’s Clean Eating Magazine.  I think after this long run I deserve a little Edy’s Slow Churned Chocolate Chip Cookie Dough ice cream for dessert, don’t you think?  :)   
 
What is your favorite light ice cream???  I’m always on the lookout for cleaner options.

Takin’ it Easy

Like I said last night, is it Friday yet?!??!?

We haven’t been able to go outside for recess in almost a month because of the cold, the melting snow, and the mud.  If anyone has ever been trapped in a classroom full of 8 and 9 year olds for six hours a day, five days a week, then you must understand my need for the weekend!!!

I decided to take it easy today.  I looked at my Fitness Log, and realized that I have only taken off five days the entire month of February.  My body is getting toned, but it is also getting very sore.

I joined some friends for a happy hour and enjoyed a little brewsky.

  

I almost never drink beer, but tonight I was in the need for something light.  Having a glass of wine would have made me a little too relaxed, if you know what I mean, and I had errands to run and papers to grade.

I also munched on some chips and salsa. 

These made me very thirsty!!!

Tonight we are even going to make an easy dinner.  Larry is going to have a lean burger grilled on our Foreman, and I am going to have another Quorn chik’n patty with TJ’s BBQ sauce.  I think I may be in love!  And because you can’t have a “burger” without fries, I am going to broil unseasoned fries until they are nice and crispy.  Doesn’t get much better than that!

Is it Friday yet???

Happy Humpday everyone!  Only two more days till the glorious weekend!

If you’re wondering whether or not I have accomplished my goal of doing a perfect pull-up last night…  well…  the answer is… not quite.

I cheated a bit!  I put one leg on the chair and pulled up with my arms and back as hard as I could.  My goal is to over time use the chair less and less until I can do one on my own. :) 

After a most grueling workout, I threw together a quick and tasty dinner.

Garlic greens and sweet corn quinoa from Clean Cooking.  I also broiled a Quorn Chik’in Patty topped with Trader Joe’s All Natural Barbecue Sauce. 

After closely examining my store brand BBQ sauce, I noticed that the very first ingredient was High Fructose Corn Syrup.  Seriously?!?!?!?!  Is nothing safe?!?!?!

While I don’t believe that it is possibly to eliminate all processed foods from our diets in today’s day and age, I do think there are major advantages to reducing the amount of HFCS consumed. 

(Here’s a neat post on the risks of consuming too much HFCS.) 

So, in comes Trader Joe’s to save the day!

It has a nice smoky taste with a little bit of sweetness and a bit of spiciness, too!  A perfect combo, if you ask me!

 

 

 

I just finished an intense 60 minute kickboxing sesh, and as I type I am munching on some herb flavored Mary’s Crackers and, of course, Trader Joe’s garlic hummus dip.

Tonight for dinner we are having breakfast for dinner.  Yum!  🙂
