Monsters in Love

Happy Humpday!!!  Can you believe how quickly this week has flown by?!?!?!

This week I have been whipping up a vegan storm!  I’ve been trying various recipes from Eat, Drink and Be Vegan by Dreena Burton. 

On Monday, I made her Olive & Sun-Dried Tomato Hummus…  well, sort of.  I didn’t have any olives so I just made the Sun-Dried Tomato Hummus part. 


This dip is far better than any I’ve ever bought in a store.  I can’t believe how easy it is to make your own hummus

Needless to say, it’s only Wednesday, and this is all the hummus I have left. 


I am a hummus monster!

And I happen to be married to the cookie monster!!!

No, not this one.

Larry’s claim to fame may be that he can eat an entire batch of cookies in one night.  WITHOUT.GAINING.A.SINGLE.POUND!!!

However, I do not blame him for eating so many last night.  These cookies were irresistible.

Not exactly chocolate chip cookie irresistible. 

But close.

Lemon Poppy Seed Crackle Cookies


These cookies are made with some unusual cookie ingredients: spelt flour, poppy seeds, fresh lemon juice and lemon zest, brown rice syrup, maple syrup, and canola oil to name just a few. 

Although I have used most of the above listed ingredients in one way or another before last night, Brown Rice Syrup is something I had never used.

It was thick and syrupy.  Sweet and gooey.  The perfect sweetener for a perfect cookie 🙂


We got creative and put a scoop of vanilla Haagen-Dazs ice cream between two cookies to make delectable ice cream sandwiches!


Kinda ruined the whole vegan aspect of the cookie, but hey, we can’t always be perfect!

Tonight I am going to try Dreena’s Orange Sesame Tofu (scallops for Larry) and Coconut-Lime Basmati Rice. 

Eat, Drink, and Be Vegan is a cookbook that I am definitely going to purchase.  The recipes are easy to follow, healthy and best of all, CLEAN! 


I’ve also enjoyed reading Alicia Silverstone’s The Kind Diet; however, I’m not sure this is one I will buy.  While I love her philosophy, and I am flirting with a vegan diet right now, I don’t think I could be this restrictive.  I believe that life is all about balance.   

I am happy to say that tomorrow is my Friday!!!  Woot woot!!!

I took a personal day on Friday, so I could visit my alma mater with my second to youngest brother and mom.  I can’t wait!!!

Dining Under Da Sea

Ahhh!  Saturday.  No alarm clock to wake me.  No lessons to teach.  No rushing around to get ready.  Is there any wonder why I love the weekends? 

Last night, Larry and I went to a nearby mall to do a little shopping and to grab some dinner.  We were celebrating!  Larry won a trip to the Homestead Resort for being one of the top 1o sales people in the region for his company!  Needless to say, I need a new dress for the formal dinner 😉

We didn’t end up buying anything, but we did have a very tasty dinner at Tara Thai.


It felt like we were little fish floating around the bottom of the ocean floor 🙂

I had the Pad Thai Jae. 


It had lots and lots of veggies in a very light semi-sweet sauce.  I could have gone for a few more pieces of the bean curd, but all in all I think we were both very pleased with our dinners.  We will definitely be visiting this restaurant again :)

I am not very familiar with Thai food.  Any suggestions for a great dish I should try next time??

Today I am loading up Lucy and a few Mother’s Day presents into the car and driving to my parents’ house.  Mom and I are planning to plant flowers, and I’m hoping I can convince her to go with me to get a pedicure or manicure before going out to dinner.

Proper Way to Eat a Pepper

Good evening!  I hope you have had a lovely Tuesday 🙂

For some reason, Tuesdays have been especially hard for me this month.  I’m rearing and ready to go on Mondays, and then I crash by the time Tuesday rolls around.  Oh, well!  After I type this baby up, it’s off to bed for me!

I started today off with some Peanut Butter Chocolate Oats.  Hard to start the day off on a bad foot when you have PBO’s for breakfast!


  • 1/3 cup oats
  • 1/2 cup almond milk
  • 1 banana
  • 1 scoop chocolate protein
  • 1 Tbsp chia seeds
  • 1 Tbsp peanut butter

Mix it all together.  Nuke for 2 minutos.  Eat.  Smile :)  Delish!

 At lunch I ate an unpictured vegetarian beef burrito with a side of Chobani’s Pomegranate Greek yogurt (I know…  kind of a weird combo!)

I have been wanting to try this brand of Greek yogurt for a while after reading that it is all natural and contains twice the amount of protein as regular yogurt.  Martin’s had them on sale last Friday for 10/$10.  Perfect!

You should definitely check out the Chobani website.  The have tons of recipes (which I cannot wait to try!) coupons, and info about their amazingly beautiful farm in upstate New York.

I simply took the mixture from vegetarian halupkies, sliced off the caps of 3 large green peppers, scooped out the seeds, and filled them with the veggie-bulgar mixture.  I then sprayed the green pepper shells with EVOO and baked the stuffed peppers for about 15-20 minutes at 450 degrees until I could easily poke a fork through the side.

And viola!  A simple, nutritious, and delicious Tuesday evening dinner.


Well, simple until it was time to devour.  Larry and I debated the proper way to eat a pepper.

Larry went for the four way cross cut pepper pickin’.


I opted for the bi-cut smushed down method.

Martin’s Review

I can’t help but sing the theme song from the sitcom “Martin” every time I think of the store! 

You remember??? Note “Marrrrr-tiiiin.”Note

Ha!   What a blast from the past!

Yesterday after work and a small celebratory happy hour for a friend who just found out she gets to keep her teaching job nest year (YAY!), I headed to the new Martin’s grocery store for some much needed groceries. 

For those of you not from the Richmond area, here’s the back story on this.  Ukrop’s was a family owned chain of grocery stores popular to this area that were recently bought by the Giant-Carlisle Division.  Gradually, the old Ukrop’s stores have been closed and converted to the new Martin’s.

I was never a regular Ukrop’s shopper.  The prices were more expensive than other stores, and I’m on a house buying budget.  I tended to only go there in emergencies, or for their fantastically fresh salad bar.  I also had them make my wedding cake, which was phenomenal!

But after hearing several people proclaim that Martin’s was much cheaper, I thought I’d give it a shot!  The store is much closer to my house and it is right next to Target, which I frequent regularly for cleaning products, household goods, and other bounties of cuteness.  It could be the start of a wonderful relationship!  😉

The first thing I noticed when I walked into the store was the bright green employees!  They were swarming everywhere and you could not miss them!  They were this color:


Very convenient for finding help 🙂

I also noticed that it was pretty much the same as Ukrop’s.  They had the same salad bar and cafe; the same deli, and sushi bar; and the same bakery.  The only differences I really saw were that the prices were lower, they flip flopped the fish and meat department, added a wall in the produce department, and they added a beer and wine section.  Unlike Ukrop’s, they will be open on Sundays and sell beer and wine….  Oh, and they sell cigarettes behind the customer service desk (yuck!).  It had a fresh coat of paint and new signs, but all in all, pretty much the same.

It is always hard to shop a new grocery store when you are unfamiliar with the aisles and where everything is, so I’m sure I forgot a few items.  But I will definitely go back to Martin’s the next time I need groceries and give it another shot!  Hey!  I might go on a Sunday and buy some wine!

Today, my friend Gen is driving into town and we are going to go for a hike!  I love hiking,  but I don’t get to do it very often.  I’m not very familiar with hiking trails in this area.  We are going to pick a Walking Trail from this website and head out to enjoy the beautiful spring weather!
