When you think of salad what do you think? Lettuce, tomatoes and cucumbers with a thick helping of dressing to wash it down?
Well, not this salad, my friends. Not this salad.
This salad from Clean Food by Terry Walters had endive, watercress, radicchio, celery, cherry tomatoes, asparagus, avocado, red onion, and orange pepper and was drizzled with a homemade poppy seed vinaigrette.
I will never think of salad as just lettuce, tomatoes and cucumbers again! This one was chock full of veggies and a variety of flavors from spicy to peppery to sweet and tangy. It had texture from the creamy avocado to the crunch celery. Each bite was a delectable delight of veggie fusion flavor.

Wow that salad sounds amazing! So many people think salads have to be boring, but they can easily be the exact opposite!!!
I love experimenting with new salads! I’ve found that adding fresh herbs to your lettuce base is also one way to really up the flavor 🙂
In the summer we love tomatoes, watermelon, red onions, a dash of sea salt, a dash of pepper, a dash of sugar, olive oil, red wine vinegar, mix of herbs (dill, basil, mint), sometimes I add toasted almonds and feta…it is delish!
This is something I will definitely try! I would have never thought to combine watermelon with the veggies! Thanks for sharing!!! 🙂
This looks lovely! So fresh and bright, my mouth is watering now. I love salads, but my favorite combination always contains avocados, chickpeas, cucumbers, spinach, olives, bacos (yep, they are vegan!) carrots, bell peppers, red onions, and whatever else I have on hand. And my favorite dressing is to mix tahini with spicy mustard and olive oil. YUMMM!
I’ll have to try the dressing… I have all of those ingredients in my kitchen!
